PROSPERITY SALAD

Create your good fortune when you try our version of the Prosperity Salad. 
Recipe by Chef Nadine Howell.

Ingredients:

Salad:
300g sashimi-grade raw salmon or trout
1 small carrot, shredded
1 small radish, shredded
1 cucumber, julienned
1 red bell pepper, julienned
1 green bell pepper, julienned
1 pomelo or grapefruit, peeled and segmented
Fried wonton crisps or crackers (for crunch)
Fresh cilantro leaves
Toasted sesame seeds
Crushed peanuts

Dressing:
2 tbsp plum sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tsp soy sauce
1 tsp honey (optional / to taste)
Dash of white pepper

COOKING INSTRUCTIONS:

1. Prepare the Salad Base.
Arrange all the shredded vegetables, pomelo, and other salad ingredients on a large platter in sections.

2. Add the Salmon.
Place the sliced salmon on top of the salad.

3. Sprinkle Toppings
Sprinkle toasted sesame seeds, crushed nuts, and wonton crisps over the salad.

4. Prepare the Dressing.
In a small bowl, combine plum sauce, rice vinegar, sesame oil, soy sauce, honey, and white pepper.

5. Toss the Salad.
