Eton mess is a traditional British dessert that combines berries and meringue. This specific recipe takes a spin on this European classic and serves as an excellent canvas for combining different fruit flavors that you can easily find locally, such as mangos and passion fruit. With its deliciously baked meringue and flavorful fruit combinations, this Manila Mess would be perfect for balmy evenings in the city.
Ingredients
80g egg whites
80g white sugar
80g icing sugar
2 pcs ripe mango
1 pc passion fruit
400 ml whipping cream

40g Fruit Garden Mango Jam
25 ml white rum

Directions
Preheat the oven to 100c
Whisk the egg whites until stiff then gradually add the white sugar. Continue to whisk until it completely incorporated then ass the icing sugar and whisk again until all combined.
Place in a piping bag pipe domes onto a baking tray lined with baking paper.
Place the meringue dome in the oven for 1 hour. After, scoop out the middle of the meringue dome and leave to dry in the oven in the residual heat for an hour.
Assembling the Eton Mess
Lightly whip the cream, peel and dices the mangos blend half into a mango puree.
Whip the cream along with the fruit Garden Mango Jam, and white Rum.
Plating
Make a bed of sauces with the mango puree place. Pipe the Whipped cream follow diced mango and then more cream into side the meringue dome to form layers. Place the dome onto the sauce. Garnish with more mango and edible flowers, smash the dome and enjoy!
