Ingredients
1 pack Rancho Gordo Ayocote Morado Bean
- 60g Red onions
- 15g Garlic, minced
- 20g Taco Seasoning
- 17g Dried Mexican Chili
- 30g Olive Oil
- 35g Chipotle in Adobo Sauce
- 80g Tomato Paste
- 0.5g Dried Oregano
- 25g Salt
- 250g Butchers Chorizo
Directions
Step 1: Prepare the Beans
Open the pack of Ayocote Morado beans.
Rinse thoroughly, discarding any beans that are broken or discolored.
Step 2: Cook the Beans
Place beans in a large pot and cover with water, about 3 inches above the bean level.
Bring to a boil, then reduce to a gentle simmer.
Add a bay leaf, garlic, onion, and a pinch of salt (or other aromatics you prefer).
Cook for 2–3 hours, or until the beans are tender and creamy inside.
Step 3: Build the Flavor Base
In a separate pot, warm olive oil over medium heat.
Sauté onion and minced garlic until soft and fragrant.
Stir in taco seasoning, oregano, rehydrated Mexican chili, chipotle in adobo, and tomato paste. Cook until the mixture deepens in color and becomes rich and aromatic.
Add the chorizo whole, allowing it to brown gently. Slice or crumble as needed once it’s cooked through.
Step 4: Bring It All Together
Add the cooked beans to the flavor base, along with some of their cooking liquid to create a saucy consistency.
Season with salt and adjust to taste.
Simmer gently for about 30 minutes, allowing the beans to absorb the smoky, spiced flavors.
