Ingredients
For the Broth Base
1L beef or pork stock
150g onions, sliced
30g garlic, crushed
50g celery, cut into chunks
50g carrots, sliced
For the Hot Pot Fixings
500g pork yakiniku slices
4-5g salt
100ml sesame oil
1 head cabbage, chopped
1 pack enoki mushrooms
1 pack shiitake mushrooms
200g carrots, thinly sliced
1 pack firm tofu, cubed
1 pack noodles (any type)
For Dippings
1 bottle kimchi seasoning
1 bottle roasted sesame dressing
Directions
Step 1. Prepare the Broth
In a pot, sauté onions, garlic, and ginger until aromatic.
Add celery and carrots, cooking for 2–3 minutes.
Pour in the stock, bring to a boil, and simmer for 15-20 minutes.
Taste and season lightly with salt for a clean, mild broth.
Step 2. Prepare the Pork
Lay out pork yakiniku slices and season lightly with salt.
Drizzle with sesame oil and toss gently (no marinating required).
Step 3. Prepare Vegetables & Sides
Cut cabbage into bite-sized pieces and slice carrots thinly.
Cube the tofu, trim roots off enoki mushrooms, and leave shiitake mushrooms whole or halved.
Prepare noodles according to package instructions or set aside for the broth.
Step 4. Set Up & Serve
Transfer hot broth to a tabletop burner or hot pot setup.
Arrange pork, vegetables, tofu, mushrooms, and noodles on platters around the pot.
Serve kimchi seasoning and roasted sesame dressing in individual dipping bowls.
