The star of this fish dish is the Barramundi—otherwise known as the Asian Sea Bass. This white fish has a silky and buttery flavor, has half the calories of a serving of salmon, and is packed with Omega-3 fatty acids and other nutrients. Spice it up with some Cajun rub and pan-fry to perfection, this spicy, vibrant, and soulful dish is definitely a great catch!
Ingredients
1 pack frozen Barramundi
1 tbsp Cajun rub
- Pinch of salt and pepper
3 tbsp olive oil
2 tbsp butter
- 1 tsp garlic, minced
1 tbsp water
1 tbsp lemon juice
- 1/2 tsp parsley, roughly chopped
Directions
- Thaw out barramundi in the chiller overnight
- Once chilled, take it out of the packaging and pat dry with paper towels
- Mix Cajun rub, salt, pepper and 1 Tbsp of olive oil, then rub on to fish, making sure to coat all sides
- While letting the fish come to room temperature, put a non-stick pan on the stove over medium heat
- When pan is heated, pour the remaining olive oil in the pan followed by the fish
- Pan fry skin side down for 3-4 mins., covered
- Flip fish and pan fry for another 3-4 mins, covered
- Take off the fish from the pan and let rest
- Wipe the excess oil from the pan and put the butter, garlic, water, salt, and pepper, then cook on medium heat for 3 mins.
- Add the lemon juice and parsley and turn off heat
- Spoon over the fish and serve
